Dan Dan noodles are bold, spicy, and bursting with Sichuan flavour. But traditionally, they’re also packed with minced meat and chicken broth. At Pam Pam, we asked ourselves a simple question: What if you could have all the taste, none of the animal products?
We took this spicy street food classic and gave it a plant-based makeover, without compromising on its iconic flavour. Here’s how we did it, and why it works.
What Makes Traditional Dan Dan Noodles So Special?
To understand how we reimagined Dan Dan noodles, it’s worth looking at what defines them in the first place. Originating from the Sichuan province of China, Dan Dan noodles (担担面) were originally sold by street vendors who carried baskets over their shoulders — one with noodles, one with sauce.

The Pam Pam Approach: Plant-Based, Always Bold
At Pam Pam, our philosophy is simple. Make plant-based food delicious, nostalgic, and easy to heat and eat. Here’s how we built our Dan Dan noodles from the ground up.
1. Creamy, Nutty Base
Traditional Dan Dan noodles use sesame paste or peanut butter to create a creamy, umami-rich sauce. We kept that same combination using a blend of sesame and peanut to mimic the original richness, but entirely vegan.
2. Custom Chilli Oil
Our house-made chilli oil combines dried chillies, Sichuan peppercorns, and a slow-cooked infusion of spices. It’s not just heat for heat’s sake. We wanted the aromatic notes and numbing kick that make Dan Dan noodles so addictive.
3. Plant-Based Mince for Texture
To replace the traditional ground meat, we use seasoned plant-based mince that mimics the bite and savoury depth of pork. It’s infused with soy, garlic, and five-spice for a bold, layered taste.
4. Bouncy Noodles That Soak It All Up
We chose wheat-based noodles that hold up well when reheated and absorb every drop of sauce. The result? Slurp-worthy texture that delivers flavour in every bite.
A Nutrient-Conscious Upgrade
Our version is high in flavour, but also a mindful choice for plant-based eaters. No MSG, no artificial flavours, and far less sodium than most takeout versions.
And since our meals are pre-cooked and snap frozen, they retain their nutrients without the need for added preservatives.
